I placed the 'Shocking Review' sign on our storefront window. As a result, we get more customer engagement than any other signs.
The silliness of the statement:"

Given the intense nature of the aromas, I allowed the bar to air.." evokes snicker's [pun] every time from customers and the curious alike. However, the resounding consensus from our view is: 
"I get the desire to create healthy chocolate....the labor-intensive nature of hand peeling the beans  adds zero benefits to the chocolate…Instead, it adds one thing -- higher costs." 

Hand-shelling the cocoa beans is a must if you want a clean finish with no ''foreign" aftertaste. By examining each bean as you're shelling, you can immediately identify spoiled, insect-infested, and foreign particles and discard them. We have found that mechanical means of shelling the beans produces significant waste. Shell casing fragments of 2% are acceptable in the industry, but not to us.
